I'm a skinner/herbalist. Is there any reason whatsoever I should care what my reputation is with anyone except for getting a mount?

that depends.
1. certain professions have patterns that are only available through reputation grind with certain factions. 2. some factions offer special enchantments only available through reputation grind 3. some factions offer epic gear only available through reputation grind 4. Argent Dawn is now requiring everyone to be Exalted to enter Naxxaramas OR you have to pay tons of cash for entry.
so yes and no. some factions, depending on your situation are worth grinding. most.... are not.

Actually, if you plan to be one of the best at your desired profession you do need to worry about faction. Example: If you want to make some of the best Blacksmithing, Tailoring, Leatherworking gear and do some of the best Enchants outside of the standard vendor and world drops, then you will want a high faction with Thorium Brotherhood, Timbermaw, Zandalar (Zul Gurub), Cenarion Hold, etc.. Most (read - all) of these patterns are BOP so the common folks cannot get them unless they are factioned with these mentioned groups. That is true with any of the crafting professions... however with the gathering professions such as skinning, herbalism, mining... there is no benefit at least at this time, of gaining rep for any factions.
