Go to Sam's Club. Buy Bird's Eye Asian Stir-Fry Vegetables and Member's Mark Salad Shrimp.
Approx. $25
Simmer together in pan with some Olive Oil and place over a bed of rice/noodles.
Depending how much you eat, this can feed you everyday for about two weeks, and you get all your vegetables.

If you want some good tasting recipes that are also good for you but not horrible to make, check out Bill Phillips' "Eating for Life".
My wife and I have about 20 recipes that we use all the time out of that book.
